Our Story

What is Bricks & Bowls?

Bricks & Bowls is a concept from Ghost Kitchen Orlando built around two signature offerings: focaccia sandwiches called Bricks and fresh, superfood-centric Bowls. It's this simple concept that inspired our name: Bricks & Bowls. What started as a single counter inside a mall has grown into a Winter Park favorite, with our next stop being Orlando International Airport.

  1. Colton O'Dwyer and Johnny Nartowicz, founders of Ghost Kitchen Orlando

    Chapter 01, The Beginning

    Two founders, one idea.

    Colton O'Dwyer and Johnny Nartowicz met as classmates at Rollins College. After seeing a lack of fresh, high-quality quick-service lunch options, they set out to create a concept that filled that gap. That idea eventually became GKO & Bricks & Bowls.

  2. The Ghost Kitchen Orlando team in the production kitchen

    Chapter 02, Ghost Kitchen Orlando

    A scratch kitchen is born.

    They launched Ghost Kitchen Orlando in 2020 (2 weeks before the pandemic) as the main commissary baking focaccia bread & cookies daily, making housemade dressings and prepping every ingredient that would eventually be served at Bricks & Bowls.

  3. Bricks & Bowls counter and menu boards at The Mall at Millenia

    Chapter 03, Millenia Mall

    Our very first storefront.

    Bricks & Bowls opened its first location inside The Mall at Millenia, introducing Orlando to our signature focaccia sandwiches and chef-crafted bowls. The location served as the foundation for the brand and helped shape the concept that continues to grow today.

  4. Bricks & Bowls Park Avenue storefront in Winter Park

    Chapter 04, Park Avenue & Winter Park

    Return to Winter Park.

    Today, Bricks & Bowls operates two locations in Winter Park: our flagship on Park Avenue and our café inside the Center for Health & Wellbeing, serving our signature focaccia sandwiches, chef-crafted bowls, and other scratch-made favorites.

The next chapter for Bricks & Bowls is bringing the concept to Orlando International Airport!

Big News

Bricks & Bowls is officially opening inside Orlando International Airport.

We're proud to share that Bricks & Bowls is coming to MCO. Bringing our fresh flavors to the airport is a huge milestone for our team, and we're honored to be included among the local concepts selected to serve millions of travelers each year.
